Four Ingredient Peanut Butter and Jam Thumbprints

This recipe is a play on a childhood favorite, the peanut butter and jam sandwich. It is fast, easy and only uses four ingredients.

In appearance this cookie also reminds me of another childhood favorite, The Voortman Turnover Cookie.

My brother, sister and I used to love these as children.

For the Jam I used my favorite President’s Choice Ontario Sour Cherry. The sour jam works very well to balance the sweet cookie. You can feel free to use whatever jam or jelly you like.

 

The Ingredients:

Recipe makes 1 dozen big cookies or 2 dozen smaller cookies

1 cup peanut butter

1/2 cup white sugar

1 egg

1/4 cup jam (more or less depending on how big your thumb is 🙂 )

 

Directions

HEAT oven to 325°F.

MIX all ingredients with large spoon until well blended.

ROLL into 24 balls; place, 4 inches apart, on baking sheets.

FLATTEN and make a thumb print in the center of each cookie

BAKE 20 min. or until lightly browned. (Do not overbake.) Cool 5 min. on baking sheets, transfer to wire racks; add jam to imprints. Cool completely.
