My Favorite Pancake Recipe
In light of tomorrow being Fat Tuesday I thought I’d share my favorite pancake recipe. As a child I always enjoyed when my Mom would make us a special treat of pancakes for dinner. It is a tradition that I enjoy sharing with my family. Here is my favorite scratch pancake recipe. It is a simple recipe that makes fluffy, and tender pancakes. My family loves it and I hope you enjoy it too.
- 1 cup milk ( I use 2%)
- 1 cup all-purpose flour
- 2 tablespoons of sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons of butter melted
- 1 egg
- cooking spray or butter for pan
- Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
- Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
