A tale of leftovers… Mini Burritos
Here’s a little tale of how last night’s leftovers became pretty and new in the form of some QUICK and YUMMY mini burritos.
Last night our family enjoyed Al Pastor inspired tacos for dinner. We had plenty left over for lunch today. With the addition of whole wheat flour tortillas and our favourite salsa I was able to whip up a new dish in minutes.
- Diced grilled pork tenderloin. (You could also use leftover steak, chicken, ground beef for tacos.)
- Refried beans. (You could also use black beans or mashed sweet potatoes.)
- Chopped green cabbage. (You could also use lettuce.)
- Onions and cilantro.
- Whole wheat flour tortillas. (I used the small 7″ tortillas but you could use big or small.)
The Directions: Spread beans on tortillas. Put your choice of meat inside and roll tortilla as seen in the picture above. Repeat for your desired amount of burritos. Put on microwave safe plate. Cover with salsa. You could top shredded cheese at this point. I omitted cheese to save myself the calories. Microwave on high for approximately 2 minutes. (Could be more or less depending on your microwave.) Top with your favourite toppings.
- Lettuce or cabbage diced
- Chopped tomatoes
- Chopped onions
- Hot sauce
- Sour cream
- Black olives
In keeping with my time and money-saving theme this week, this meal literally takes 10 – 15 minutes or less depending on how fast you move. It is very versatile and can be adapted to include virtually anything you like. It is cost-effective and gives you a fresh new spin on whatever leftovers you can incorporate from your fridge.
